I need to add some extra fields to various categories, for example on "watches", I want to add a drop-down for gender, i.e. male, female, unisex. I have read the instructions on how to do this, but it doesn't mention anything about naming the fields, i.e. putting in male, female and unisex.
The administrator has disabled public write access.

Actually I found the solution. I didn't realise is that the fields appear when you start adding in the information. However, it says "none"when you haven't selected anything, is this normal, or can we have it so the box is clear until you select an option?

Actually for drop-down box you need at-least one data to display it.
